Grind Size: 850 μm (similar to Kosher salt)

Temperature: 203 F

Dose: 18 g

Final Brew weight: 300 g

Brew Recipe:

  1. Pour in the center of the coffee bed, expanding out in a circle until all coffee is saturated (~40-80 g water)

  2. Let the coffee bloom for 45 seconds

  3. Pour to 200 g. Start in the center until the water is level with the coffee bed, then drawing in a circle that is roughly the size of a quarter.

  4. Let the water level lower about a finger’s width

  5. Pour to 300 g while drawing a circle again.

  6. Let the coffee drain, with a target time of 2:15 - 2:45.

    Tip: Use your final drawdown time as a guide for your grind size adjustments.
    Too long → Grind coarser | Too short → Grind finer
