From Sens Coffee:

We harvest the coffee at its optimal stage of ripeness and allow it to rest in collection bins for 24 hours. It is then placed in water to separate the highest-quality cherries from defective ones before continuing with depulping and the subsequent washing process.

Next, the coffee undergoes a washed-process co-fermentation using goldenberry (uchuva), glucose, and vanilla for 48 hours. This stage creates a cup profile that is vibrant, fruity, delicate, and complex.

Finally, the coffee is sun-dried for two days and then transferred to a silo until itreaches the ideal moisture content, ensuring quality, consistency, and stability.
